How would I make solid end panels that start at the floor and extend to the top of an upper cabinet? I'm trying to make a dry bar that will basically stand alone in the middle of a long wall.

Sounds like the "fridge with legs" cabinet under the Upper menu should work. You can set it to have a panel (leg) on either or both sides.

Thanks Rob, that seems to work. Is it possible to show fluting on the outside of the legs in 3D?

There is a separate fluted molding under the Misc. menu. In order to get it to look correct in the 3d you would need to use two separate units, an upper and a base filler. The left stile of the upper will need to be set to zero. For the base filler you would need to set the face frame thickness to zero and deduct the molding thickness from its depth. You can then put the fluted molding in front of it.

I guess I should have said the 'sides' of the legs. I want to show fluting on the wide sides of the legs as this is a stand alone piece in the middle of the wall.

Ah ok.
For that you would need to create another wall, with its height and depth set to zero, in the same location of the side panel and then put the fluted molding on it.
