Is there a way to make my finished ends mitered. Both against a face frame and a finished back of an island?

If I understand correctly you would only need to increase the width of the ends and then cut the miters.

If that is correct you can use the part size adjustment window to increase the width of the sides for the base cabinets by 1.5". You would want to do that, print the shop plans for the island, and then set the adjustment back to zero & print the rest of the shop plans for the job.
