Where is the option for setting the cabinet backs to the full height of the cabinet?

There isn't a single setting for this. You will need to use the parts adjustments window, accessed from the Settings menu.
The is a back height adjustment for each of the upper, lower and tall cabinets. The number you enter will be added to the part dimension. 3 adds 3, -3 subtracts 3
